Cooking instructions
1.
Whisk 1 egg with 2 cups of milk in a bowl. Soak 10 buegill fillets for at least 1 hour.

Mix 1 cup of cornmeal with 1 tot 2 tbs of Old Bay seasoning and some salt and pepper to taste.
3.
Heat 4 cups of canola oil in a non-stick frying pan. Coat the fish fillets in the cornmeal mixture and place them in the hot oil using tongs.

Fry each fillets for 1 to 2 minutes per side. Drain the fish on paper towel.
5.
Serve with slices of lemon and your favorite sauce.
