Cooking instructions
1.
Prepare the marinade in a large ziplock bag: combine 1 thinly sliced red onion, 4 tbs molasses, 1 tbs crushed juniper berries, 0.5 tsp cinnamon powder, some thyme, 2 rosemary sprigs, the juice of 0.5 lemon and 2 tbs olive oil.

Add 3 lbs haunch of venison in the bag and marinate in the fridge for at least 6 hours. Remove the meat from the fridge 1 hour before cooking.

Preheat the oven to 395°F. Pour the marinade on a lined baking sheet. Season the meat with flaked salt.

Heat 1 tbs olive oil in a skillet and sear the venison for 3 minutes on both sides. Transfer the meat to the baking sheet on the marinade.
5.
Roast the venison for 25 to 30 minutes for medium-rare doneness. Allow to rest for 20 minutes before slicing.
