Cooking instructions

Purge the deer heart under cold, running water to empty it completely from all remaining blood. Trim away all excess valves, arteries, veins and fat.

Slice the heart open and remove the connective tissue. Cut the heart in slices. To remove the iron taste from the meat, soak it overnight in salted water.

Melt 1/4 cup of butter in a skillet. Season the heart with fresh parsley and salt and pepper to taste.

Add a crushed garlic clove and the meat to the skillet.
5.
Sear the meat for about 3 minutes per side over medium heat.
