Cooking instructions

1. Leave a 3 lbs haunch of venison at room temperature for 30 minutes before cooking. Preheat the oven to 450°F.
2. With a sharp knife, make a few small cuts in the venison. Insert a halved garlic clove and some fresh rosemary in each hole.
3. Melt 2 tbs butter in a skillet and fry 4 chopped onions. Transfer the onions to a roasting dish. Place the venison on top and coat the meat with 1/3 cup olive oil. Season to taste with salt and pepper.
4. Roast the venison for 20 minutes. Take the meat out of the oven. Lower the oven to 350°F. Meanwhile, baste the venison with juices. Roast the venison for another 25 minutes.
5. Allow the venison to rest for 30 minutes before slicing. Meanwhile, combine the onions, the cooking juices and 1 cup of venison stock in a saucepan. Bring to a boil. Smoothen the sauce in a blender if desired.
