Cooking instructions

In a pot, combine 1 gallon of room temperature water, 1 cup of salt and 1 cup of brown sugar. Stir well. When all is dissolved, place 8 turkey legs in the liquid, cover the pot and leave in the refridgerator for 4 to 6 hours.

Remove the turkey legs from the brine. Rinse them thorougly under cool running water. Pat them dry with paper towel.

Heat the grill and leave one side free of coals. Place the turkey legs over the burning coals and cook for 15 minutes, flipping them every 5 minutes.

Transfer the turkey legs to the cool side of the grill and cook for 45 minutes. Flip them occasionally.
5.
The turkey legs are ready when the internal temperature reaches 165°F. Serve the turkey legs warm.
