Cooking instructions

Preheat the oven to 375°F. Place 1 quartered onion and a bay leaf in the cavity of a large, cleaned turkey. Put half a pack of turkey stuffing inside and tie the legs together with kitchen string.

Turkey needs 13 minutes roasting time per pound, plus 90 minutes. Calculate the roasting time accordingly.

Line a large roasting tin with a very large piece of foil and place the turkey in the tin. Brush some softened butter on it and grate half a nutmeg. Season with salt and pepper. Cover the turkey with 10 bacon strips, pour over a glass of red wine. Fold the corners of the foil together to make a parcel and seal well.

Roast the turkey according to the calculated time. 90 minutes before the end, take the bacon off the turkey and discard the fat from the baking tin. Place the turkey back in to the oven and leave the foil open. Baste the turkey with the juices a few times during baking.

The turkey is ready when the juices run clear. If the meat is still pinkish, bake for another 15 minutes. Allow to rest under aluminum foil for 30 minutes before carving.
