Cooking instructions

Leave 1 filet mignon roast (chateaubriand) at room temperature for at least 45 minutes before cooking.

Preheat the oven to 300°F. Season the meat with coarse salt and freshly ground black pepper.

Rub some butter on all sides of the meat and place it in the oven for 60 minutes to obtain medium rare doneness.
4.
Melt some butter in a sauté pan and transfer the filet mignon roast in the hot butter to give it an even nice brown color.
5.
Place the filet mignon roast on a plate, tent it with tin foil and leave to rest for 10 minutes before serving.
