Cooking instructions
1.
Preheat the grill. Remove the silver skin from 3 to 4 lbs of pork baby back ribs.
2.
Coat the ribs with dry rub and wrap them in 2 or 3 layers of aluminium foil.
3.
Place the ribs over direct heat for 1 hour, turning them every 20 minutes.
4.
Take the ribs out of the foil, drain the liquids and brush the top of the ribs with BBQ sauce.
5.
Place the lid on the grill and cook the ribs for 10 to 12 minutes. Baste again after 5 minutes. Allow to rest for 5 minutes before serving.
