Cooking instructions

Preheat the oven to 350°F.

Crush 3 garlic cloves. Mix them with 1 tbs of dried rosemary and some salt and pepper to taste.

Pierce a 2 lbs pork loin roast with a sharp knife in several places and put some of the garlic mixture in. Rub the remaining mixture on the pork with 1/4 cup of olive oil.

Place the pork loin in the oven and baste it regularly with the cooking liquids. Roast the loin roast for 1 hour or until the internal temperature has reached 145°F.

Remove the loin roast to a platter and tent it with tin foil. Meanwhile, heat 0.5 cup of wine in the pan and combine it with the browned bits. Serve the meat with this pan juice.
