Cooking instructions

1. Leave the turkey at room temperature for at least 1 hour before cooking. Preheat the oven to 350°F.
2. Rub the turkey generously with olive oil, salt and pepper. Pour 250 ml of cold water into a roasting tray. The turkey should roast for 20 minutes per kg plus 90 minutes.
3. Cover the turkey with tin foil and place it in the oven. Remove the foil when there is 1 hour of roasting time left and baste it with the juices from the oven tray. Roast uncovered for another 30 minutes.
4. Remove the turkey from the oven and baste it again. Turn the temperature up to 425°F and roast for a final 30 minutes. When the juices run clear, the turkey is done. Check the perfect temperature of 165°F (74°C) with a meat thermometer.
5. Remove the foil and leave the turkey to rest for at least 30 minutes before carving.
