Cooking instructions

1. Preheat the oven to 375°F. Line an oven-safe dish with tin foil and place a rack in the dish to drain the cooking juices.
2. Mix a couple of crushed garlic cloves with 2 tbs of lemon juice, 2 tbs of olive oil, 1 tbs of mustard, fresh rosemary, salt and pepper. Rub this mixture on all sides of the lamb meat.
3. Form a roll with the leg of lamb and tie it together with kitchen twine.
4. Roast the leg of lamb for at least 70 minutes, depending on the required tenderness. Use a meat thermometer to check.
5. Leave the leg of lamb to rest for at least 10 minutes before carving.
