Cooking instructions

Preheat the oven to 350°F. Place the turkey breast onto a roasting pan.

Blend 1/4 cup of better with the salt, pepper, Italian herbs mix, garlic powder, paprika powder and fresh crushed garlic and brush half of this mixture onto the turkey breast, skin side up. Cover loosely with tin foil.

Roast the turkey breast for 1 hour. Baste the turkey breast with the rest of the seasoning and return to the oven for an extra 30 minutes.

The turkey breast is done when the juices run clear. Insert a meat thermometer in the thickest part of the meat to check the internal temperature at 165°. Then leave it to rest.

Transfer some of the excess grease into a skillet and cook it with a splash of white wine, some butter, shallots and one cup of chicken stock. Thicken the gravy with flour.
