Cooking instructions
1.
Preheat the oven to 400°F. Place 4 cups of fresh spinach leaves at the bottom of a baking dish.

Place 2 rockfish fillets on the spinach and arrange 10 halved cherry tomatoes around the fish.

Pour 0.5 cup of vegetable broth in the dish. Season the fish with 2 tbs of dill, a pinch of garlic powder, a pinch of lemon pepper, a pinch of onion powder and some salt and pepper to taste.

Put a slice of lemon and a slice of onion on each fish fillet, as well 1 tsp of butter.

Cover the dish with aluminum foil and bake the fish for 20 to 25 minutes until the fish flakes easily with a fork.
