Cooking instructions

Leave the meat at room temperature for at least 1 hour before cooking. Preheat the oven to broiling temperature. Place an oven rack as high as possible.

Season a 2 lbs steak with salt and pepper to taste. Heat a cast iron skillet to a maximum for 4 to 5 minutes.

Place the steak in the pan and immediately transfer it to the oven. Broil for 4 minutes.

Take the skillet out of the oven and carefully turn the steak.

Broil for 4 extra minutes. Take the steak out of the oven, transer it to a plate and cover it with foil. Allow to rest for 20 minutes before serving.
