Cooking instructions
1.
Leave the beef sirloin joint at room temperature for at least one hour before cooking. Preheat the oven to 430°F.

Pat the beef dry with paper towel. Mix some salt, pepper, crushed garlic, rosemary, thyme and olive oil and rub this onto the beef.
3.
Roast the beef at 430° for the first 20 to 30 minutes.
4.
Lower the temperature to 320°F and roast for a further 20 minutes per pound of meat for rare and 35 minutes for well done.
5.
Leave the beef roast to rest for 10 minutes before carving. Serve with your favorite vegetables.
