Cooking instructions

Preheat the oven to 350°F.

In a bowl, crush 3 garlic cloves. Add 1 tbs of dried rosemary and a pinch of salt and pepper. Combine to obtain a paste.

Make a few cuts in a 2 lbs pork tenderloin and stuff the garlic paste in the meat. Use the remaining garlic mixture to rub the pork with 1/4 cup of olive oil.

Transfer the tenderloin in the preheated oven and roast if for 1 hour. Regularly baste it with the cooking liquids. The internal temperature of the tenderloin should be 145°F.
5.
Transfer the pork tenderloin to a serving dish and cover it with aluminum foil. Allow to rest for 10 minutes before serving.
