Cooking instructions

1. Heat the oven to 425°F. Trim any silver skin from 2 pork tenderloins. Season to taste with salt and pepper.
2. Heat 1 tbs of vegetable or canola oil in an oven-safe frying pan over medium heat. Sear the pork tenderloins for 2 minutes per side.
3. Scatter some dry rub over the meat.
4. Place the pan in the preheated oven and roast for 10 to 15 minutes until the internal temperature reaches 145°F.
5. Transfer the tenderloins to a plate and tent with aluminum foil. Leave to rest for 10 minutes.
