Cooking instructions
1.
Pour 12 oz of full-bodied beer in a bowl and add 1.5 cups of cornmeal, 1 tsp of salt, 1 tsp of paprika powder and 0.5 tsp of cayenne pepper.

Whisk all ingredients to a light batter and reserve in the refridgerator for at least 1 hour. Pour 1 cup of flour on a dinner plate.

Heat at least 2 inches of canola oil to 375°F.
4.
Coat the crappie fillets in flour and dip them in the beer batter. Fry each fillet until golden brown.
5.
Drain the fillets on paper towel and serve with a slice of lemon and tartar sauce.
