Cooking instructions

Preheat the oven to 450°F. Combine 1/3 cup Dijon mustard with 2 tbs minced garlic, 1 tbs chopped thyme, 2 tsp freshly ground black pepper, 2 tsp kosher salt and 3 tbs olive oil. Set aside.

Place a 13 lbs prime rib roast bone-side down in a large roasting pan. Season it lightly with salt. Roast for 20 minutes.

Take the meat out of the oven. Lower the temperature to 350°F. Coat the rib with the mustard mixture and roast for 1.5 hours more. Rotate the pan a couple of times during roasting.

The rib roast is ready when the internal temperature reads 120°F. Tent the roast with aluminum foil and allow to rest for 30 minutes before carving.

Using a sharp knife, cut between the bones and the meat to separate the ribs. Serve with the juices.
