Cooking instructions

1. Coat the beef brisket completely with dry rub, cover it in tin foil and refrigerate overnight for up to 12 hours.
2. Preheat the oven to 300°F.
3. Place the brisket, fat cap up, on a couple of very large sheets of tin foil in a roasting pan. Bring the corners of the foil together to loosely cover the meat.
4. Bake the brisket for 1 hour and 15 minutes per pound of meat. The internal temperature should reach 180°F.
5. Open the foil and bake the brisket for an extra 45 minutes. Leave to rest for 30 minutes before cutting it against the grain.
