Cooking instructions

Preheat the oven to 375°. You will need a small chicken for this recipe as other weights will lengthen cooking time.

Pat the chicken dry with a paper towel. Rub it with salt, pepper and dried herbs to taste.

Put the chicken on a grill on an oven tray and roast if for 1 hour and 15 minutes. Cover the chicken with tin foil after 1 hour to prevent overbrowning.
4.
Check the doneness of the chicken with a meat thermometer. The internal temperature should be 165° and juices should run clear.
5.
Leave the chicken to rest for 15 minutes before carving.
