Cooking instructions
1.
Place 4 chicken breasts in the bottom of a pot. Season them with salt and pepper to taste.

Cover the chicken with 1 inch of water.

Bring the water to a boil. Then reduce the heat and let the chicken breasts simmer until the internal termperature has reached 165°F. This will take 8 to 16 minutes, depending on the thickness of the chicken breasts.
4.
If you don't have a meat thermometer, check that the inside of the chicken is no longer pink.
5.
Remove the chicken from the water, drain and let it cool off. Shred the chicken for the enchilada preparation.
