Cooking instructions

Leave a 4 lbs pork shoulder or butt to dry in the fridge for at least 1 hour or more.

Remove the pork from the fridge and leave it at room temperature for 1 to 2 hours. Preheat the oven to 460°. Score the meat and pat it dry.

Place the pork skin-side down in an oven roasting tray. Rub it with garlic powder and salt on the underside. Put olive oil on the meat and generously rub the rind with salt.

Roast the pork for 50 minutes until the rind crackles. Reduce the temperature to 350° and roast for an extra 1 to 1.5 hours. Then put the temperature back up to 440° to create the golding crackling.

Use a meat thermometer to check the ideal internal temperature of 160°F before removing the pork from the oven. Leave to rest for 15 minutes before serving.
