Cooking instructions

Heat the oven to 425°F. Place the zest of half a lemon and 2 sliced shallots in an oven dish.

Season 2 soles with salt and place them on the shallots, skin-side up.

Place a small cube of butter on each sole and add 3/4 cup of water to the dish.
4.
Place the fish in the oven for 10 minutes. Baste the soles after 5 minutes.
5.
Baste the fish once more. Serve with potatoes and spring greens.
