Cooking instructions

1. Leave 2 lbs fresh sockeye salmon at room temperature for 10 minutes before cooking. Preheat the oven to 375°F.
2. Line a baking sheet with aluminum foil and spray some baking oil onto it. Arrange some fresh rosemary and some lemon slices in the sheet. Add the salmon on top.
3. Drizzle the fish with olive oil and season to taste with salt, pepper and minced garlic. Pour some fresh lemon juice on top. Close the aluminum parcels tightly, leaving a little room inside for steam to circulate.
4. Bake the fish for 15 to 20 minutes. If the fish is very thick, cooking time might be longer.
5. Change the temperature of the oven to broil and place the fish back for 3 minutes. Slice the salmon in portions to serve.
