Cooking instructions

1. Allow 2 lbs beef tenderloin to reach room temperature for 1 hour before roasting. Preheat the oven to 500°F.
2. Tie 5 or 6 loops of kitchen string around the tenderloin for uniform cooking. Pat the meat dry with paper towel.
3. Prepare the garlic rub: combine 2 minced garlic cloves with 0.5 tbs fresh thyme leaves and 1 tbs fresh rosemary. Add 2 tbs unsalted butter, 1 tbs horseradish, 1.5 tsp salt and 1 tsp black pepper. Mix well.
4. Coat the tenderloin evenly with this garlic rub and place the meat in a roasting pan. Roast the meat for 28 to 30 minutes for medium doneness (140°-145°F).
5. Transfer the tenderloin to a cutting board, tent it loosley with aluminum foil and allow to rest for 10 minutes before slicing.
