Cooking instructions

Heat some oil in a large pot or cast-iron skillet. Brown the roast on all sides over medium heat.

Fill the pot with water, enough to cover the roast. Add the onion, the garlic, the 4 chopped celery stalks, salt, pepper and basil.

Bring everything to a boil. Reduce the heat to low and simmer for 2 hours and 15 minutes. Add some more water if needed to keep the roast covered.

Add the potatoes and turnips and simmer for an extra 15 minutes. Add the carrots and simmer for another 30 minutes.
5.
The chuck roast is done when the meat can be pulled apart with a fork.
