Cooking instructions

Preheat the oven to 250°F. Prepare the dry rub: combine 2 tbs brown sugar, 1 tbs garlic powder, 1 tbs chili flakes, 1 tsp paprika powder, 0.5 tsp ground cumin, 0.5 tsp kosher salt and 1 tbs olive oil.

Season 2 lbs beef short ribs and allow to rest at room temperature for 2 hours or longer.

Line a baking sheet with aluminum foil and place the short ribs in a single layer. Place a second aluminum foil over the ribs to make a packet.

Bake the ribs for 3 hours. Check the internal temperature: it should read 203°F at the thickest part of the ribs.

If needed, bake for another 30 minutes. Then, take off the foil and broil the ribs for 5 minutes. To serve, brush with BBQ sauce.
