Cooking instructions
1.
Preheat the oven to 390°F. Pat 4 ling cod fillets dry with paper towel and season them to taste with salt and pepper.

In a bowl, mix 4 tbs olive oil, 10 chopped cherry tomatoes, a sliced lemon, 2 smashed garic cloves and some fresh thyme sprigs.

Spray some cooking oil in a baking dish and pour the oil mixture in it. Arrange the fish fillets on top.

Bake the fish for 15 minutes until it flakes easily with a fork.
5.
Serve on a bed of cream spinach. Spoon some cooking juices over the fish.
