Cooking instructions

Leave the flank steak at room temperature for 30 minutes before cooking. With a sharp knife, cut away connective tissue. Then make small cuts in the meat, on both sides. Be careful not to cut completely through.

Rub the steak with a mixture of salt, pepper and dry mustard. With your fingers, rub 1 tbs of butter over the meat as well.

Heat a large frying pan on high heat and place the steak in the middle of the pan. Sear the flank steak for 2 to 3 minutes. When the meat is browned, flip it and sear the other side for 2 to 3 minutes as well.

Remove the frying pan from the heat and let it cook for 5 to 10 minutes more in the residual heat.

Place the meat on a cutting board. Leave it to rest for 10 minutes, tent with tin foil. Carve against the grain and serve.
