Cooking instructions
1.
Wash a large eggplant and slice off the stem. Cut the eggplant in 1" steaks.
2.
Line an oven wire rack with baking paper and lay out the eggplant. Season them with salt and leave to rest for 30 minutes.
3.
Pat the eggplant dry with paper towel and transfer the steaks onto the baking sheet.
4.
Mix 3 tbs of olive oil with 2 tbs of soy sauce and 1 tsp of paprika powder and brush this mixture onto the steaks
5.
Roast the eggplant for 20 minutes. Flip and roast for another 10 to 20 minutes until golden brown and tender.
