Cooking instructions
1.
Wash the bunch of collard greens and cut out the thick center. Form long rolls with the greens and cut them up with scissors to make long strips.

Heat 2 tbs of olive oil in a cast-iron skillet and add the collard greens and a pinch of salt.
3.
Stir the greens with the oil and cook for 30 seconds. Stir every 30 seconds until all the greens are dark green and wilted. Sauté for a total of 3 to 6 minutes.
4.
When the edges are starting to turn brown, add 2 crushed garlic cloves and a pinch of chili flakes (optional).
5.
Serve the collard greens with a lemon wedge.
