Cooking instructions

1. Start by rinsing the catfish under cold water, then pat them dry with a paper towel.
2. In a large shallow dish, combine 0.5 cup of cornmeal with 1/4 cup of flour, 1 tsp of salt, 0.5 tsp of paprika powder and a pinch of ground black pepper. Pour 3/4 cups of milk in a plate.
3. Pass the catfish fillets in the milk, then coat them with the mixture. Shake off any excess cornmeal.
4. Heat 3 tbs of butter in a skillet over high heat. Fry the catfish for 3 minutes on each side.
5. The fish is done when the fish starts to flake. Serve with slices of lemon.
