Cooking instructions

Preheat the oven to 390°F. Season the brisket with salt and pepper to taste.

Place the baby potatoes in a roasting pan, drizzle with olive oil and season with salt and pepper. Place the brisket on top of the layer of baby potatoes. Put the fat side up.

Roast the brisket for about 75 minutes, until the crust is golden brown.

Lower the temperature to 300°F. Remove the potatoes, add 25 oz of beef stock to the pan and season the brisket again with pepper and salt. Cover with aluminum foil.
5.
Roast for another 2.5 hours. Leave to rest for 10 minutes before carving. Serve with the reheated potatoes.
