Cooking instructions

Cut the alligator meat into chunks of maximum 1 inch size. Rub them with salt and pepper. Mix the flour and the cornstarch in a bowl and pour 2 cups of buttermilk in a dish.

Heat the oil in a cast-iron skillet to 350°. Drop the alligator chunks in the flour mixture to lightly dust them. Then dip them in the buttermilk. Remove with a slotted spoon to drip off. Put the chunks back in the flour mixture and shake off.

Fry a few chunks of alligator at a time. Pieces are ready after 5 to 7 minutes. They'll be golden brown and start to float.

Remove the chunks and drain them on a paper towel. Season them with salt.
5.
Gently mix the drained pieces with herbs and some garlic mayo.
