Cooking instructions

Prepare the BBQ for indirect grilling over high heat.

Pat the skin of the pork dry and score the skin through the rind into the fat.

Rub the pork with olive oil and salt.

Roast the pork for 20 to 30 minutes. If your BBQ has a cover, close it. If not, cover the pork with aluminum foil. Lower the temperature to indirect medium heat and leave for another 50 minutes.
5.
Once the internal temperature of the pork is 60°C, the meat is ready. Leave to rest for 15 minutes before serving.
