Cooking instructions
1.
Apply 2 tbs of balsamic vinegar to the roast.

Mix the dry ingredients with the olive oil to taste and rub it onto the meat.
3.
Roast the cross rib for 15 minutes at 450°F. Then reduce the heat ot 350°F and roast for another 40 to 60 minutes.

The cross rib roast is done when the internal temperature reaches 125°F. Check the temperature with a meat thermometer.
5.
Remove the cross rib roast from the oven and cover it loosely with tin foil. Let it rest for 20 minutes before carving and serving.
