Cooking instructions

Cut 1/2 lb beef chuck roast in 1" pieces and season with salt and pepper.

In a Dutch ovenn, heat 1 tbs vegetable oil. Cook the beef pieces for 3 to 5 minutes until brown. Flip and cook for another 2 to 3 minutes. Set the meat aside.

In the Dutch oven, add 1 chopped onion, a pinch of salt and 4 crushed garlic cloves. Cook for 1 minute. Pour in 3/4 cup beef broth, 1 tbs Worcester sauce, 1 tsp brown sugar and 0.5 tsp salt. Bring to a boil.

Lower the heat to a simmer and cook the beef for 60 to 90 minutes, while stirring regularly. Add the remaining beef broth if needed. Add 2 chopped carrots and 1 diced potato and cook during the last 30 minutes.

At the very end, stir in 1/2 cup peas and some fresh thyme. Remove the sprig of thyme before serving.
