Cooking instructions

1. Preheat the oven to 350°F. Heat a large dutch oven.
2. Season a 3 to 5 lbs chuck roast with salt and pepper to taste. Add 2 tbs of vegetable oil to the pot.
3. Sear the meat for 3 to 4 minutes on each side, until browned. Remove the roast from the oven and reserve on a plate. Sauté 6 minced garlic cloves for a minute and add 2 cups of beef broth. Place the roast back in the pot.
4. Pour 1/4 of Worcester sauce over the meat and put 2 chopped onions, 1 lb of carrots and 1 lb of chopped red potatoes around it. Add a sprig of fresh rosemary on top of the meat.
5. Cover the dutch oven and cook in the oven for 3 hours, until the internal temperature reaches 202°F. Serve the roast with the vegetables.
