Cooking instructions

Preheat the oven to 500°F.

Rinse and slice 1 onion and 2 leeks and slice them thinly. Sauté them in a skillet with some olive oil for 3 to 5 minutes. Add 1.5 cups of white wine and simmer for a couple of minutes.

Place 4 lbs of mussels in a deep roasting pan and add the vegetable and wine sauce.

Cover the pan tightly with tin foil and steam the mussels for 15 minutes. If the mussels have not all opened yet, steam for a few more minutes.

When done, sprinkle the mussels with some salt and fresh parsley. Serve with bread or pasta.
