Cooking instructions
1.
Preheat the oven to 400°F. Drizzle some olive oil on 2 cod fillets and season with salt and pepper to taste.

Heat 2 tbs of canola oil in an oven safe skillet and place each cod fillet top side down in the pan.

Sear for about 3 to 4 minutes. Carefully flip the fillets and place the pan in the preheated oven.

Bake the fish for about 12 minutes until the fish feels slightly firm. Take the pan out of the oven.
5.
Add 2 tbs of unsalted butter to the pan, tilt to one side and spoon the butter over the fish a couple of times. Squeeze lemon juice over the cod and serve.
