Cooking instructions

Soak the dry beans in water overnight to reduce cooking time. Drain the beans and rinse them.

Put the beans in an iron-cast skillet and add water. Cover the beans completely and bring to a boil.
3.
Reduce the heat to low and leave to simmer for at least 1 hour. Leave the cover slightly ajar if you're using the beans in hot preparations.
4.
Check doneness regularly. Some varieties of beans need up to 3 hours of cooking time. Add salt when the beans are almost done.
5.
Serve immediately. Otherwise cool the beans in the cooking liquid.
