Cooking instructions
1.
You will need a 4lbs piece of sirloin steak. Let it rest at room temperature for at least 1 hour before baking it.

Preheat the oven to 450°F. Add salt, pepper, 1tbs of fresh rosemary and 1 tbs of fresh thyme to some olive oil. Rub this preparation on the sirloin steak.

Place the sirloin on a roasting rack in a roasting pan to avoid any liquids spilling into your oven.
4.
Roast for an initial 15 minutes before reducing the heat to 325°F. Roast another 1 hour and 45 minutes for medium meat. Medium well done will take 2 hours.
5.
Remove the sirloin roast from the oven. Leave to rest for 20 minutes to half an hour before serving.
