Cooking instructions

1. Soak and clean 1 lb of spinach in cold water. Drain and remove any excess moisture with a towel or salad spinner.
2. Heat 2 tbs olive oil in a sauté pan and add 3 minced garlic cloves. Brown the garlic for 1 minute.
3. Add the spinach to the pan and push it down with your hands. Cover the pan and cook the spinach for 1 minute. Turn the spinach with a spatula and cook for 1 extra minute.
4. Remove from the heat and drain any excess liquid.
5. Add a pinch of salt and some olive oil. Serve as a side.
