Cooking instructions

Leave a 5 lbs standing rib roast at room temperature for at least 30 minutes to an hour. Preheat the oven to 500°F.

Pat the rib dry with paper towel and season it generously with salt and pepper.

Place the rib roast fat-side up in a roasting pan. Broil the meat for 15 minutes at 500°F.

Reduce the temperature of the oven to 325°F and roast the meat for 15 minutes per pound to obtain medium rare cooking. The internal temperature should reach 125°F.

When done, cover the rib roast wiht aluminum foil and leave it to rest for 20 minutes before serving.
