Cooking instructions

Make the sauce: whisk together 1 cup of soy sauce, 0.5 cup of rice wine, 2 tsp of olive oil, 2 tsp of hoisin sauce, 2 tsp of fish sauce, 2 tsp of oyster sauce and the juice of 0.5 lime.

Heat 3 tbs of olive oil in a skillet. Stir 1 diced shallot and some fresh ginger in the pan for 2 minutes. Preheat the oven to 400°F.

Score both sides of the fish, pat it dry with a paper towel. Season with salt and pepper. Rub it with olive oil. Add the sauce mixture in the pan and simmer for 5 to 10 minutes until it thickens. Pour the mixture over the fish. Cover with aluminum foil.

Bake the fish for 20 minutes. Remove the foil. Bake for 10 more minutes.

Remove the skin and lift the fish from the bones. Serve warm.
