Cooking instructions

Preheat the oven at 325°F. Place the ham shank in a roasting pan with the cut end down.

Coat the ham shank with mustard and brown sugar.

Cover the ham shank with aluminum foil, place it in the oven and bake for 1.5 hours at 325°. Remove the foil, baste the ham and bake uncovered for another 15 to 18 minutes per pound at 165°.

Remove the ham from the oven hen the internal temperature of the ham reaches 165°F. Use a meat thermometer for best results.

Put the aluminum foil back on the ham and leave to rest for 15 minutes.
