What is cooking oil
There are many types of oil, but they're not all suitable for hot preparations. The most healthy oil for low and medium-heat cooking is extra virgin olive oil, because of its low smoking point. It is unrefined, which means it contains a lot of monounsaturated fats. For preparations at high temperature, avocado oil is the best option. Like extra virgin olive oil, it is unrefined and has a large amount of the good fatty acids.
