As a rule, meat should be allowed some resting time after cooking and before carving. The piece of meat needs to be taken off the heat source and placed on a plate or cutting board under a loose piece of foil. This will allow the temperature to rise just enough for the juices to be reabsorbed and keep all the flavours. Don't tighten the foil too much, or the meat will be overcooked.
