The best way to know if you're meat is done is by checking the correct internal temperature with a digital meat thermometer. Steaks, roasts and chops need to cooked according to the following chart: 80 to 100°F for extra-rare, 120 to 125°F for rare, 130 to 135°F for medium rare, 140 to 145°F for medium, 150 to 155°F for medium well and 160° and above for well done cooking.
